Honey Cake

Honey Cake, this cake is quick to put together, and would make a wonderful snack cake or afternoon pick-me-up.

  1. Set the oven to 325°F for preheat before we begin preparing the cake mix. Grease and line an 8 inch square cake tin.
  2. In a saucepan add honey and butter and gently heat until melted, stirring continuously.
  3. Sift the flour, baking powder, salt, cinnamon and soda bicarbonate into a mixing bowl. Add in the mixed peel.
  4. Beat the eggs and milk together and stir into the honey and butter mixture with the lemon rind. Make a well in the centre of the dry ingredients and add the honey n mixture gradually, beating well between each addition.
  5. Put into the prepared tin and sprinkle almonds flakes.Bake till 60 - 75 minutes until the cake is firm , yet springy to the touch. Take the cake out of the oven and using a fine skewer , prick the surface of the hot cake and pour on the 3 tablespoon of honey.
  6. Return to the oven immediately and bake for a further 10 minutes. Leave to cool in the tin.
